Kracking Kimchi

This is a wonderful ferment originally from Korea, its traditionally with a chilli paste and fish sauce for strong flavour. I make this Kimchi Vegan, i use a tamari sauce to give it extra flavour. its famous for its spicy flavour and high content of probiotics.

Ingredients; Napa cabbage, Mooli, seasonal greens, spring onions, sea salt.

Paste; Steamed Pumpkin, gochuguru, garlic, ginger, Tamari, glutenous rice, seaweed broth, sea salt.

Ginger Zinger Raw Sauerkraut

I lovingly shred the cabbage in my little kitchen waring shredder, and have perfected the art of cutting and feeding into blade shaft so the cabbage is shredded as finely as possible.

I use glass fermentation jars and usually ferment for 3 weeks. You may notice sometimes the ginger is more fiery than other times, this usually depends what country it is grown in, I always use the same amount per kilo of cabbage. Fermentation creates Probiotics this occurs when feeding the starch and sugars with the natural bacteria in the food, which have a bacteria on their skin, this process creates lactic acid, these good bacteria can control the bad bacteria's and remove them, for example Candida. Our gut is said to be our second brain, so it is essential that we take care of it, the average diet these days consists of a lot of highly processed foods which can stripe our guts of good bacteria. Fermenting creates beneficial B vitamins, enzymes, omega-3 fatty acids and strains of probiotics.

This is a wonderful product because it is Raw it is full of vital nutrients and vitamins,The rocket alone is known for its vitims C,K A and is said to be a great green to fight against cancer. It helps with eyesight and has high levels of nitrates. Coriander also has incredible health benefits with vitamins like Thiamin and Zinc, A, C, E (Alpha Tocopherol), K, Riboflavin, Niacin, B6, Folate, Pantothenic Acid, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganeseall this goes to support healthy skin, heart and brain to immune boosting anti oxidants.
